Ingredients
- 1 lb ground beef (80/20 blend)
- 4 slices American or cheddar cheese
- 8 strips thick-cut bacon, cooked crispy
- 4 toasted sesame seed buns
- Kosher salt and black pepper
- 1 tablespoon vegetable oil
Toppings:
- Butter lettuce leaves
- Sliced tomatoes
- Dill pickle chips
- Thinly sliced red onion
- Ketchup, mustard, and mayonnaise
Step-by-Step Instructions
Step 1: Form Loose Balls
Divide beef into 8 equal portions (2 oz each). Roll into loose balls – do NOT pack them tight.
Step 2: Smash and Sear
Heat a cast iron skillet or flat griddle until smoking hot. Place a beef ball on the surface, cover with parchment paper, and smash hard with a sturdy spatula. Season with salt and pepper. Cook for 2-3 minutes until edges are crispy and lacy.
