
The Foolproof Holiday Turkey
A perfectly roasted turkey with crackling golden skin and juicy meat is easier than you think. This method uses a simple butter-herb rub under the skin and a high-heat start to ensure crispy skin, followed by gentle roasting for even cooking.
Ingredients
- 1 whole turkey (14-16 lbs), thawed
- 6 tablespoons butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh sage, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme
- 1 lemon, halved
- 1 onion, quartered
- 2 cups chicken broth
- Salt and pepper
Instructions
Step 1: Prep
Pat turkey dry. Mix butter with garlic and herbs. Carefully loosen skin over breast and thighs. Spread butter mixture under the skin and all over the outside. Season with salt and pepper. Stuff cavity with lemon and onion.
Step 2: High-Heat Start
Place turkey breast-side up on a rack in a roasting pan. Pour broth into the bottom. Roast at 450°F for 30 minutes for crispy skin.
Step 3: Low and Slow
Reduce heat to 325°F. Continue roasting for about 2.5-3 hours (13 min/lb), basting every 45 minutes, until internal temp reaches 165°F in the thickest part of the thigh.
Step 4: Rest
Tent with foil and rest 30 minutes before carving.
