This creamy Tuscan chicken is the kind of one-pan dinner that makes weeknight cooking feel special. Juicy, golden chicken thighs swim in a luscious garlic parmesan cream sauce studded with sun-dried tomatoes and fresh spinach. Ingredients
- 6 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 tablespoon butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, drained and sliced
- 3 cups fresh baby spinach
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh basil for garnish
Step-by-Step Instructions
Step 1: Sear the Chicken
Season chicken thighs with salt, pepper, and Italian seasoning. Heat olive oil in a large cast iron skillet over medium-high heat. Sear chicken skin-side down for 6-7 minutes until skin is golden and crispy. Flip and cook 5 minutes more. Remove and set aside.
Step 2: Make the Tuscan Sauce
Add butter to the same skillet. Sauté garlic for 30 seconds. Add heavy cream, chicken broth, Parmesan, sun-dried tomatoes, and red pepper flakes. Stir until cheese melts and sauce thickens slightly, about 3 minutes.

Stir in spinach until wilted. Return chicken thighs to the skillet, skin-side up. Simmer for 5-8 minutes until chicken is cooked through (165°F internal).
