Authentic Korean BBQ at Home
Korean BBQ short ribs (galbi) are one of the most popular Korean dishes for good reason. The combination of soy sauce, Asian pear, sesame, and brown sugar creates a marinade that tenderizes the meat while building incredible layers of umami flavor. When grilled, the sugars caramelize into a sticky, smoky glaze that’s absolutely addictive.
Ingredients
- 3 lbs flanken-cut beef short ribs (cut across the bone, 1/4 inch thick)
Marinade:
- 1/2 cup soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons sesame oil
- 1 Asian pear, grated (or 1/4 cup pear juice)
- 5 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons rice wine (mirin)
- 1 tablespoon gochujang (Korean chili paste)
- 1 green onion, sliced
- 1 tablespoon sesame seeds
- 1/2 teaspoon black pepper
Step-by-Step Instructions
Step 1: Marinate
Mix all marinade ingredients in a large bowl. Add short ribs and toss to coat. Cover and refrigerate for at least 4 hours, preferably overnight.
Step 2: Grill
Preheat grill to high heat. Remove ribs from marinade, shaking off excess. Grill for 2-3 minutes per side until caramelized and charred in spots.
Step 3: Glaze
Boil remaining marinade in a saucepan for 5 minutes. Brush onto ribs during the last minute of grilling.
Step 4: Serve
Garnish with sesame seeds and sliced green onions. Serve with steamed rice and kimchi.
