Korean BBQ short ribs (galbi) are one of the most popular Korean dishes for good reason. The combination of soy sauce, Asian pear, sesame, and brown sugar creates a marinade that tenderizes the meat while building incredible layers of umami flavor. When grilled, the sugars caramelize into a sticky, smoky glaze that's absolutely addictive.
Mix all marinade ingredients in a large bowl. Add short ribs and toss to coat. Cover and refrigerate for at least 4 hours, preferably overnight.
Preheat grill to high heat. Remove ribs from marinade, shaking off excess. Grill for 2-3 minutes per side until caramelized and charred in spots.
Boil remaining marinade in a saucepan for 5 minutes. Brush onto ribs during the last minute of grilling.
Garnish with sesame seeds and sliced green onions. Serve with steamed rice and kimchi.
